Welcome to the new and improved Life With A Side Of Coffee. You may notice things look different around here. Well, you are correct (if not, wait till tomorrow and refresh). I made a big decision about two months ago to switch from Blogger to Wordpress and here we are. New design, new look, new everything! I'm still working some kinks out so bear with me as I fix the formatting in posts and add new stuff to the side bar. The formatting is a huge time commitment and I'm doing as many as I can at a time working my way back. So what do you think?! Be honest, be brutal. Let me know how you feel in the comments. This change is also the reason why Cooking With Stanley is a bit late this week. I had to hold off on posting as I got everything up and running but more on that later.
Starter: Mushroom and White Asparagus Salad
Main: Grilled Tuna

This week's Cooking With Stanley menu was much lighter than most of the meals I've made before. The fish and the salad were a great balance with the pasta because they were lighter in flavor whereas the pasta was packed with it. The Mushroom and White Asparagus Salad was fairly easy to make. There was hardly any cooking with this particular dish. I just boiled the asparagus for a minute or two to soften it up. No one wants to eat asparagus raw no matter how much you love it. The dressing made for this salad was fantastic. It was fairly simple and not overpowering at all.
The Grilled Tuna I was hesitant to try because...fish. I just don't trust it and I don't look forward to trying it. I only bought one tuna steak as well because this stuff is expensive. Coming in at a whopping $25/pound, I got one steak for everyone to try a portion of and then filled everyone's bellies with tilapia instead. I must say, the tuna was really, really good. It was prepared super easy with a simple lime and olive oil marinade. The tuna itself was surprisingly meaty and not at all fishy. If it wasn't so expensive, this is a fish that I could see myself eating regularly. Alongside the tuna, I served Angry Penne which is basically a fun way of saying spicy pasta. I whipped up a basic tomato sauce, added red pepper and pretty much called it a day. I loved this. I loved the spice, I loved the flavor and I loved that I held back on my serving because I wasn't overly stuffed after this meal.
Overall, this week's Cooking With Stanley was a success! I know I still haven't delivered those cookies yet. I swear they're coming soon. Maybe next week or the week after? I have all the ingredients sitting in my kitchen, I just haven't found the motivation to dig them out. Maybe Saturday. It can be my Mother's Day gift to my aunts or something. We'll see.
