Dinners For Busy Weeknights: Chili Stuffed Peppers

Here at LWASOC, we love recipes that are great for busy weeknights. This particular one was a hit in my house and super tasty. Chili Stuffed Peppers are easy to get going and they're cooking while you deal with last-minute chores or homework. To lighten it up a little more, instead of ground beef we used ground turkey. This is a carb-free meal people! Enjoy!

Taste the meat mixture to make sure that the spices are to your preference. I prefer things a little spicier so if you need to tone down the heat, don't be afraid to halve the spices and add more from there.

Chili Stuffed Peppers
An easy weeknight dinner that everyone will love. Don't be afraid to start with half the spices and add more as you go if you need to tone down the heat.
  • 1 pound Ground Turkey
  • 1/2 cup Onion, chopped
  • 2 Garlic Cloves, minced
  • 1 Jalapeno, chopped (optional)
  • 8 ounces Tomato Sauce
  • 2 tablespoons Tomato Paste
  • 3 teaspoons Chili Powder
  • 1 teaspoon Paprika, plus more for sprinkling
  • 1/2 teaspoon Cumin
  • 2 tablesoons Hot Sauce
  • 4 Bell Peppers
  • 1 cup Cheddar Cheese (optional)
Preheat the oven to 375 degrees.Cook onions and garlic over medium-high heat until softened but not browned. Add turkey, chili powder, paprika, cumin and hot sauce. Mix well. After the turkey is finished cooking, halve the four bell peppers and toss the seeds and ribs. Fill each pepper half with a good helping of the chili mix. Top with cheddar cheese, if using, and a sprinkle of paprika. Bake in the oven for 20-30 minutes until the cheese is bubbly and the peppers have softened. Serve immediately.
