Here at LWASOC, we love recipes that are great for busy weeknights. This particular one was a hit in my house and super tasty. Chili Stuffed Peppers are easy to get going and they're cooking while you deal with last-minute chores or homework. To lighten it up a little more, instead of ground beef we used ground turkey. This is a carb-free meal people! Enjoy!
Taste the meat mixture to make sure that the spices are to your preference. I prefer things a little spicier so if you need to tone down the heat, don't be afraid to halve the spices and add more from there.
- 1 pound Ground Turkey
- 1/2 cup Onion, chopped
- 2 Garlic Cloves, minced
- 1 Jalapeno, chopped (optional)
- 8 ounces Tomato Sauce
- 2 tablespoons Tomato Paste
- 3 teaspoons Chili Powder
- 1 teaspoon Paprika, plus more for sprinkling
- 1/2 teaspoon Cumin
- 2 tablesoons Hot Sauce
- 4 Bell Peppers
- 1 cup Cheddar Cheese (optional)
