Cooking With Stanley Week 45

I noticed over the year I've been cooking meals from The Tucci Cookbook that some days I throw a bunch of random recipes together without a real plan. Today, is one of those days. Everything was delicious and easy to make but it didn't all fit. So I split it up into a dinner and a lunch which worked well. The dinner is very simple to make and is good for a weeknight or busy weekend.

Rice Salad

The Pastina with Eggs is a simple dish that Stanley talked about loving as a kid. It's a great lunch dish that is both comforting and delicious. With four ingredients, you honestly can't get easier than this. I made it for lunch during a busy work day and it took almost no time at all. Kids would love this and the great thing is that you can omit the eggs if you have picky eaters and then it's basically just butter noodles with cheese.

The Meatballs and Rice Salad were a great combination. Of course, you can serve the meatballs with any gravy of choice, make sandwiches or put it over pasta. After a heavy weekend full of Christmas food, a simple dinner was exactly what the doctor ordered. The meatballs are bursting with flavor and very moist. The Rice Salad is refreshing thanks to the lemon but also very filling. It was a great combination.
