Chicken Rollatini with Spinach & Cheesy Elicoidali Pasta: the recipe description starts out by calling this an Italian-American comfort food and I couldn't have said it better myself. Creamy, cheesy pasta and cheesy spinach filled chicken make for one delectable combination perfect for a cold night. It takes a little time to prep but most of the work is done while the chicken bakes in the oven. It's a fairly simple dinner the entire family is bound to love and quite tasty.
Stir-Fried Beef & Broccoli with Garlic Rice & Pickled Delicata Squash: I don't normally pick favorites but this one was a pretty strong contender. Every part of it was flavored beautifully which can be hard to do with a simple white rice. The squash on top was unexpected but a nice touch, especially for this time of year. This was a really quick dinner to get on the table and that red chile sauce, the perfect extra note.

Besty's Best isn't a meal delivery service but they do have some of the tastiest gourmet nut and seed butters around. The company was created by Betsy Opyt, a registered dietitian who uses whole, natural ingredients while combining unique flavors for a tasty, nutritious product. Besty's Best sent us each of their products to test out ourselves and while we haven't gotten to the cashew butter yet, we have made it through the others.
