Super Simple Strawberry Conserve
Created by Yvonne Stevens, Owner and Creative Director of Penthouse Sweets
4 pounds of fresh or frozen strawberries (We prefer frozen WHOLE strawberries because they are always fresh and have extra liquid.)
2 cups granulated sugar
3 tablespoons lemon juice
1. If using fresh strawberries, wash berries, cut off tops, and discard. Slice strawberries lengthwise and place in a tall pot. If using frozen berries, place directly in pot. Do not rinse or add any extra liquid.
2. Pour sugar and lemon juice over berries. Let sit for 10 minutes to bring out the natural juices.
3. Place on stove over medium-high heat for 15-20 minutes. Stir occasionally and watch closely to make sure it doesn’t bubble over.
4. After 15-20 minutes, your mixture should be clear, slightly thickened and dark red in color.
5. Remove from heat.
6. Scrape the reduction from the top of the liquid and discard.
7. Refrigerate in an airtight container for up to 1 week or in the freezer for up to 1-2 months.
This can be enjoyed at any meal! Try it on bagels, toast, crackers, cheese, yogurt, cake, or mixed in with your favorite oil to make a delicious berry vinaigrette!
