Gourmet Grilled Cheese To Celebrate National Grilled Cheese Day

Happy National Grilled Cheese Day! I hope you will treat yourself to a delicious, gooey sandwich to celebrate. We have a decadent, gourmet grilled cheese recipe for you today. It is satisfying and so over the top, your taste buds will be begging for more. This is quite possibly one of my favorite recipes that I've come up with to date. It's a great dinner for weeknights any time of the year too so make sure to file it for busy days.

The caramelized mushrooms and onions are an extra step that might take a few moments but worth it. They add a nice punch of flavor to this sandwich and pairs fantastic with Gouda cheese. Believe me when I say, take the five minutes to cook them. For the chicken breast, pick up some chicken strips in the deli section or shred a bit of rotisserie chicken. You can also cook a chicken breast yourself but getting it pre-made at the store cuts the extra step.

This can also be made in a panini press if you prefer that method over the traditional skillet. Carefully hold the top side of the sandwich as you flip it over. Placing a cheese slice on both slices of bread makes it easier. One half of the sandwich will glue together by the time you need to flip. 

GRILLED CHEESE WITH GOUDA, CARAMELIZED ONIONS & MUSHROOMS AND CHICKEN
Ingredients:
4 oz. mushrooms
1/4 onion, thinly sliced
1 tablespoon olive oil
4 slices of country-style bread
4 tablespoons butter
4 slices of Gouda cheese
1 cup sliced chicken breast

Directions:
1. Heat olive oil in a small pan. Cook onions and mushrooms until cooked and caramelized. Remove from heat.

2. Butter one side of each slice of bread with a tablespoon of butter. On each non-butter side, layer a piece of cheese. Top one side of the bread with sliced chicken breast and the caramelized onions and mushrooms. Sprinkle with rosemary. Close the sandwich.

3. Place sandwiches on a large skillet. Let the sandwich cook 6-8 minutes on medium-low heat until the side toasts and cheese starts to get melty on the inside. Flip and repeat. Cut the sandwich in half and serve immediately. 

Add an extra slice of cheese for an extra gooey gourmet grilled cheese sandwich or make it as as is. This delicious, easy dinner will become a regular each week. How do you prefer your grilled cheese?
